Zucchini Patties

This recipe is packed with low fat protein from the egg whites. Zucchini is high in fiber and contains many minerals including calcium, iron, magnesium, phosphorus, and plenty of potassium (potassium is good for relief of muscle cramps). It also contains vitamins A, C, K, and folic acid, along with antioxidants that assist in preventing diseases.
*16 oz carton egg whites
*3 med sized zucchinis (include skin) chopped in processor; dry with paper towel
*½ onion
Chop onion and zucchinis in food processor. Combine chopped vegetables with egg whites and mix with fork. Ladle small portion (pancake size) of mixture into pan sprayed with olive oil. Cook on both sides.
