salmon appetizer

Here’s a different and tasty appetizer that’s great for holiday parties!

Smoked Salmon Appetizer

appetizer ingredients6 ounces of smoked salmon
large cucumber
½ cup Italian or raspberry vinaigrette dressing
½ cup mayonnaise or Smart Balance
½ cup pepper jelly
your favorite dip (such as spinach-artichoke or spinach-kale)
fresh dill

Slice cucumber into 12 pieces about ½ inch thick. Slice smoked salmon into 12 pieces about ½ ounce each. Mix mayonnaise and pepper jelly in a bowl. Mix in salmon pieces and let sit for about 15 minutes. Dip cucumber slices in dressing. (I use my own mix of olive oil and garlic, but vinaigrette or Italian will work fine.) Roll each coated piece of salmon around one teaspoon of the dip and place on top of cucumber slices. Garnish with a sprig of dill and secure with a toothpick. Makes a colorful, festive presentation!
